The Kinderhook Salad - There's Nothing Like It!

There are only three certified executive chefs at the Lake of the Ozarks - and two of them reside at Old Kinderhook in Camdenton, MO! This week, we want to share with you one of our signature selections that truly sets us apart: The Kinderhook Salad.

The Backstory

As Chefs John Biggs and Thomas Robinett were contemplating ways to enhance the menu over the summer, they knew they wanted to make a salad that would compete with a popular Midwest salad known as the Mayfair salad. The Mayfair salad originated at the Mayfair hotel in St. Louis and can currently be found on many menus across Missouri. When the two chefs at our golf resort at the Lake of the Ozarks decided to put their heads together and create their own salad - one that would rival the Mayfair and be worthy to appear on menus across the country - the Kinderhook Salad was born.  They wanted to not only make a great salad but make one that would far surpass the already known Mayfair salad.  The salad they came up with is the Kinderhook salad.  The dressing is what truly sets this salad apart, containing a unique blend of garlic, celery, dijon mustard, eggs, anchovies, olive oil, and onions, as well as other ingredients on occasion.

The Kinderhook Salad

The Kinderhook Salad features a romaine heart in the center of a baked parmesan tuile (a savory baked wafer) with The Trophy Room's house dressing. These base ingredients are combined with a concasse of roasted heirloom tomatoes tossed with roasted garlic oil, salt and pepper, and finished with a very large warm buttered crouton. Needless to say, this salad has come a staple on the menu at The Trophy Room.
