Recipe from the Trophy Room

Duck Confit 

Chef Biggs has another of his favorite recipes to share with you this month!  Duck Confit is a French dish made with the leg of the duck.  Check out this recipe below or you can leave the cooking to the professionals and stop by the Trophy Room at Old Kinderhook for a delicious meal.  Old Kinderhook features one of the best fine dining restaurants at the Lake of the Ozarks!


6 duck legs 
3 oz salt
2 oz brown sugar
1 T ground bay leaf
2 t thyme leaves
1.5 T minced garlic
10 black peppercorns
2 t chopped rosemary 
72 fl oz duck fat 


1) Mix the salt, sugar, bay leaf, garlic, peppercorns and rosemary together. 

2) Trim excess fat off of the duck legs. Rub cure mixture on the duck legs and then place in a stainless steel pan & press with a weight. Refrigerate for 48 hours. 

3) Rinse the duck legs and pat them dry with a towel. 

4) Bring the duck fat to a simmer then add the duck legs - simmer for 3 hours or until the leg meat is tender and pulls off the leg easily. 

5) Allow the duck to cool slightly and remove the meat from the bone and rough chop it. Place the meat in mason jars and cover the meat with just enough fat to completely cover it. Refrigerate for up to six months.

Old Kinderhook Announces Grand Opening of "The Ice"

Old Kinderhook would like to announce the grand opening of The Ice at Old Kinderhook on December 4, 2014.  The Ice, an outdoor pond hockey sized rink, will be the only ice skating rink at the Lake of the Ozarks, located just 5 minutes West of Camdenton at the Old Kinderhook Golf Resort.  The Ice will offer public skating 7 days a week, with sessions starting at 4 PM Monday through Friday and 10 AM to 10 PM on Saturday and Sundays.  The rink is nestled between the Tom Weiskopf signature designed championship golf course at the Lake of the Ozarks, the award winning Trophy Room restaurant and the new Lodge at Old Kinderhook, offering 84 spacious rooms opening in early 2015!

Grand Opening Festivities Begin at 4 PM

  • Music featuring Shawn C. 
  • Holiday Dance Demonstration by Releve Dance Academy 
  • Autograph Session with Ken Morrow, President of KC Ice, 4 time Stanley Cup Champion and 1984 Miracle on Ice Olympic Gold Medalist

The Ice will offer seasonal skating along with cozy fire pits for roasting S’mores and hot chocolate available at the new cabana. S’mores with Santa will be offered on Saturdays throughout the holiday season from 10:00am to 2:00pm and 1:00pm to 3:00pm Sundays. Pond hockey leagues will be forming along with skate lessons. During the summer months, The Ice will transform into The Sand at Old Kinderhook, which will include two full size sand volley ball courts, which adds another new amenity to the Old Kinderhook development.

Golf Season Continues at Old Kinderhook!

With the conclusion of our fall green aeration, the golf season at Old Kinderhook continues. The warm temperatures we were experiencing helped with the recovery of the greens following this process.  We are now in the midst of select tree removal around some of the greens at our Lake of the Ozarks golf course.  This will allow more sunlight and significantly improve the health of the grass. We strive to continually improve golf course conditions that our members and visitors enjoy each year!

Tip from the Pro

Practicing excellence in golf course maintenance includes the aeration process. It is a necessity in overall health of the greens. This makes putting a bit "bumpy" for a short time as the greens heal. Here are our best recommendations if playing a course following aeration:
  • Bring your patience to the golf course - bumpy greens make putting less precise  
  • Use a different, older putter, as playing aerated greens can be tough on equipment
  • Understand the greens will play slower than normal, a heavier putter is helpful  
It is also helpful to spend a little extra time on the practice green after greens aeration. Here's to excellent playing conditions!
